Sparkling Rosé from the Santa Cruz Mountains – This Sparkling Rosé is a Byington “triple” Pinot Noir made entirely from our Estate-grown Pinot. It starts with our early-harvest Pinot grapes to create the rosé. We then add Pinot port, which includes our Pinot-based dosage, adding a whisper of sweetness to this dry sparkling wine. Crafted by Methode Champenoise, and given extended time on the lees, a flurry of tiny bubbles carry flavors of cherry, strawberry, and peach into a creamy finish. Enjoy this festive wine with a variety of cuisine. A perfect pairing for any celebration!
