Spring has certainly sprung up here at the winery. We just finished pre-pruning the vineyard, which is really the first step in prepping the vines for our 2008 harvest. The 2007 wines are all barreled down and it is time for the winemaking crew to take a much needed break. There are some stunning wines in barrel right now which we will be showcasing at the upcoming Wine Club Barrel Tasting. We have some great events in the works again this year -- a great cooking class series with Hands On Gourmet, Al Fresco Thursday evenings, Sunday Jazz series, and our Spring Wine Dinner. Stay tuned for more details.

2004 Smith-Reichel Cabernet Sauvignon
Alexander Valley
 Byington has been producing the Smith- Reichel
Cabernet Sauvignon for as many years as
the winery has been here. The wine is
strong, powerful and moving with a very bold tannin structure which will allow the
Smith-Reichel to age beautifully. When I say age I mean it, at least ten
years of aging for those of you who can wait that long. This wine must be the final wine of the
evening at a dinner party because it will blow the others away with its
full-bodied, rich flavor. If you wish to cellar some, order more now.

2005 Bates Ranch Cabernet Franc
Santa Cruz Mountains
This wine has charisma - fruity velvety and spicy all in one. The palate has an interesting clove character balanced by elegant violet and raspberry notes. This wine requires a special occasion, so whether your occasion is Easter Dinner, or that it is almost the weekend, sit back and take the time to enjoy this Cab Franc. I promise it will be worth it. We only produced a limited amount of this gem so order more now.

2005 Hastings Ranch Zinfandel
Paso Robles
 At first sip you are struck by a symphony of earth and fruit with a velvety mouth feel. Being so young, the wine has a dry, tannic finish that will age out over time. I highly recommend opening a bottle now and decanting it. This will soften the tannins and create a luscious texture. Enjoy this Zin with everything from barbecue to chocolate. It is one of the best vintages we have seen from the Hasting's Ranch. Our stock Zinfandel never lasts very long, so to get your share I would buy more now.

Cooking Classes
There is still space available to train with the distinguished chefs of Hands On Gourmet and Master the art of French cuisine on March 30.
The chef will explain and
demonstrate key techniques while you create and learn by doing. After
cooking together for about one and a half hours, sit down, relax, eat
and enjoy Byington wine pairings! We'll handle all the clean up. The
class begins at 12:00 and will last approximately an hour and a half
with lunch to follow.

Steak au Poivre with Whipped Potatoes and Heirloom Carrots
